I have a labradoodle that is about 60 lbs. I live in an apartment and I am away from home about 8.5 hours during the week. I feel bad for the dog, since he is very social. I found a wirehaired pointing griffon at a local animal shelter and thought that he could be a good companion for the both of us. We take 2 brisk walks per day. We walk about 30 minutes in the morning and about an hour at night. Would this be enough exercise for the griffon or is it wrong of me to even consider to adopt the dog?

The Wiredhaired Pointing Griffon needs at least an hour and a half of hard running exercise per day. As well, the Labradoodle should have between 1 1/2 - 2 hours of hard running exercise per day. So if you are able to up the amount of time you spend with your dog already and can handle two athletic dogs, then that would be fine. If not, it may be better to find a different breed of dog with a lower exercise need.
