We got our 1 y.o. shih tzu as a rescue from a puppymill. He often gets items such as combs or shoes or socks and hides them behind our bed. He growls if we try to get the items back and I think he might nip. We're not sure how to handle this. He is loving in every other way.

A dog in a puppy mill is used to stressful conditions and may if had to compete with other dogs to get food. I would ignore her hoarding behavior and retrieve the items when she is out of the room. Provide her a Nyla bone for chewing, (no rawhide, they're a choking hazard) and plenty of toys of her own. Give her time to adjust to her new home and with providing these things and a special dog bed of her own, the hoarding behavior should subside.
