I rescued a 6 year old Newfie Border Collie Mix from the shelter last year, he is adorable! I noticed that he doesn't stretch or "shake it off" like other dogs do.... Every morning my pit mix wakes up and stretches and shakes, Bear however, just gets up and gets on with the day... Is this just something Newfoundlands don't do?

I had a border collie chow mix.. she hardley ever streached... but was always ready to go with me.. I would not worry about it.. unless you notice her having joint pains .. then still may not be the cause..if you see any problems with her joints see your vet.. outherwise,,, dogs have their own ways to care for themselves

The Newfoundland's average life span is 8-10 years, sometimes shorter, and sometimes longer, depending on the breeder/linage of the dog. While the Border Collie lives an average life span of 12 years. Meaning that at 6 years old, your dog is bordering on being a senior. In which case, joint pain could be a factor in your dog not stretching. But if you do not feel/see any stiffness, pain or problems then I wouldn't be worried about it.
