The first thing is to find a reputable trainer who can guide you. I would start with obedience training at 4-6 months (as early as possible). Once the dog is obedient, then start with the hunting training. If possible, use the same trainer through all training. One thing to make sure you do is to be heavily involved in the training. Hunting training continues for the hunting life of the dog and you will need to continue outside of hunting season. By being involved with the initial training, you can learn how to keep the training going as the dog ages. Being involved from the beginning also associates you in your dog's mind as his/her hunting companion.

You should introduce them to birds at 2-5weeks. Do this so they don't get bird shy. Some thing you could do is get pigions and show them to the puppy and then let it fly away by the puppy. Or you could get a bird wing and sort of fan it around the puppy and let it play with it.
