It is always possible to train a dog to do something, it is the amount of work required that varies. That is why a lot of people say their dogs 'can't' do something, when it is the owner at fault.
From my experience with brittanys you will be able to have your off leash, but because that hunting instinct is there, you'll have to realize that the dog may not stay as close, nor automatically come with called. The greatest reward for any bird/game dog is running and hunting, as that is exactly what they were taught to do. I have taught my dogs to respond to a loud pitched whistle (it snaps them out of what I call 'hunting mode') in the field and come closer to me.
