Here's a tip. Every time your bloodhounds are quiet, reward them with their favorite treat. Eventually, they will understand that they will get treats when they're quiet and they will be quiet.

I breed Bloodhounds and I have never had one that bays or barks while tracking. Mine have all been silent trackers. When they pick up a scent they pretty much run the whole time they are tracking it until they lose it or need to take a minute to pick it back up. So be ready to keep up.
